Ingredients
- 2 large potatoes, peeled and cut into cubes
- 2 carrots, peeled and cut into cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup frozen peas
Method
- Preheat the oven to 200ºC.
- Place potatoes and carrots in a large bowl and drizzle with olive oil.
- Sprinkle with salt, and toss to combine.
- Spread vegetables onto a baking sheet and roast in the preheated oven for 20 minutes.
- Meanwhile, add the frozen peas to a pot of boiling water and cook for 5 minutes.
- Drain the vegetables and peas and place in a large bowl.
- Mash the potatoes and carrots until desired consistency is achieved.
- Add the cooked peas and stir to combine.
