Roasted Carrot and Mashed Potato Medley

Ingredients

  • 2 large potatoes, peeled and cut into cubes
  • 2 carrots, peeled and cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup frozen peas

Method

  • Preheat the oven to 200ºC.
  • Place potatoes and carrots in a large bowl and drizzle with olive oil.
  • Sprinkle with salt, and toss to combine.
  • Spread vegetables onto a baking sheet and roast in the preheated oven for 20 minutes.
  • Meanwhile, add the frozen peas to a pot of boiling water and cook for 5 minutes.
  • Drain the vegetables and peas and place in a large bowl.
  • Mash the potatoes and carrots until desired consistency is achieved.
  • Add the cooked peas and stir to combine.
