Ingredients;
- 2 cups of rice
- 1 can (400 grams) of cowpeas
- 2 tablespoons of oil
- 1/2 teaspoon of cumin seeds
- 1 teaspoon of mustard seeds
- 1 teaspoon of turmeric powder
- 1/2 teaspoon of chili powder

- 1/2 teaspoon of salt
- 2 tablespoons of chopped garlic
- 1 teaspoon of chopped ginger
- 2 tablespoons of finely chopped onions
- 2 tablespoons of chopped coriander leaves

Method
- Heat the oil in a large pan over medium heat.
- Add the cumin seeds and mustard seeds and cook for about 1 minute.
- Add the garlic, ginger and onions and cook for a further 2 minutes.
- Add the turmeric, chili powder, salt and cook for a further 2 minutes.
- Add the rice and cowpeas and stir to combine.
- Cover the pan and reduce the heat to low. Simmer for 15 minutes, or until the rice is cooked.
- Remove the pan from the heat and stir in the chopped coriander leaves.
- Serve hot.
