Spicy Rice and Cowpeas

  • 2 cups of rice
  • 1 can (400 grams) of cowpeas
  • 2 tablespoons of oil
  • 1/2 teaspoon of cumin seeds
  • 1 teaspoon of mustard seeds
  • 1 teaspoon of turmeric powder
  • 1/2 teaspoon of chili powder
  • 1/2 teaspoon of salt
  • 2 tablespoons of chopped garlic
  • 1 teaspoon of chopped ginger
  • 2 tablespoons of finely chopped onions
  • 2 tablespoons of chopped coriander leaves


  1. Heat the oil in a large pan over medium heat.
  2. Add the cumin seeds and mustard seeds and cook for about 1 minute.
  3. Add the garlic, ginger and onions and cook for a further 2 minutes.
  4. Add the turmeric, chili powder, salt and cook for a further 2 minutes.
  5. Add the rice and cowpeas and stir to combine.
  6. Cover the pan and reduce the heat to low. Simmer for 15 minutes, or until the rice is cooked.
  7. Remove the pan from the heat and stir in the chopped coriander leaves.
  8. Serve hot.
