Crispy Olive Oil Herbed Potato Wedges

  • 2 large potatoes, washed and cut into wedges
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon dried herbs (oregano, thyme, rosemary)


  1. Preheat oven to 220C.
  2. Place potato wedges on a baking sheet.
  3. Drizzle olive oil over the wedges and season with salt and herbs.
  4. Toss the wedges until they are evenly coated.
  5. Bake for 25-30 minutes, stirring every 10 minutes to ensure even cooking.
  6. Remove from the oven when golden and crispy.
  7. Serve with your favorite dip.
