Recipe/Ingredients
- 5 ripe Bananas
- 2 teaspoons chia seed (as a replacement for 2 eggs)
- 2 tablespoon Hone and 1 tablespoon Molasses (adjustable according to your test)
- 1 cup Soya Milk or any Vegetable Milk or Water
- 1 teaspoon vanila essence
- ½ cup of olive oil or any oil of your Choice
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon bicarbonate of soda
- 1 teaspoon of cinnamon
Method
- Soak the chia seed in 1/2 cup of your measured milk and wait for 20 to 30minutes to form a gel that will act as a binder instead of eggs.
- Preheat your oven at 180 degrees
- Mix your sugar and eggs, oil mix and lastly mashed bananas.
- In a separate bowl mix all your dry ingredients then fold in your wet ingredients,
- mix well just make sure you don’t overmix.
- Bake at 180 for 20 to 25 minutes
