Banana-Egg Pancakes

Ingredients

  • 2 ripe bananas
  • 2 Tbs Ground Flaxseed or 2 Tbs Chia seeds or 2 eggs
  • 150g self-raising flour
  • 150ml milk / plant based milk
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of sweetener
  • 1 teaspoon of vanilla extract

Method

  • Mash the bananas in a large bowl.
  • (Soak the chia seed for 30minutes to make a jelly ) add the flaxseed meal or Break the eggs if using egg, into the mashed banana and mix them together.
  • Add the self-raising flour, milk or plant based milk, vegetable oil, sweetener and vanilla extract to the mix and stir until combined.
  • Heat a non-stick pan over medium-high heat and add a tablespoon of vegetable oil.
  • When the oil is hot, spoon the batter onto the pan and cook for 2-3 minutes.
  • Flip the pancakes and cook for a further 2 minutes until golden brown.
  • Serve with your favourite toppings and enjoy!
