Ingredients
- 2 ripe bananas
- 2 Tbs Ground Flaxseed or 2 Tbs Chia seeds or 2 eggs
- 150g self-raising flour
- 150ml milk / plant based milk
- 2 tablespoons of vegetable oil
- 2 tablespoons of sweetener
- 1 teaspoon of vanilla extract
Method
- Mash the bananas in a large bowl.
- (Soak the chia seed for 30minutes to make a jelly ) add the flaxseed meal or Break the eggs if using egg, into the mashed banana and mix them together.
- Add the self-raising flour, milk or plant based milk, vegetable oil, sweetener and vanilla extract to the mix and stir until combined.
- Heat a non-stick pan over medium-high heat and add a tablespoon of vegetable oil.
- When the oil is hot, spoon the batter onto the pan and cook for 2-3 minutes.
- Flip the pancakes and cook for a further 2 minutes until golden brown.
- Serve with your favourite toppings and enjoy!
