
- 2 carrots, grated
- 2 celery stalks, grated
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons of apple cider vinegar

Method
- In a large bowl, combine the grated carrots and celery.
- Add the finely chopped onion and mix together.
- In a separate small bowl, whisk together the olive oil, apple cider vinegar and salt.
- Pour the dressing over the slaw and mix together to combine.
- Serve chilled or at room temperature.
